Sweet but tasty, if you want to go for an easy cake recipe go for this casual one. Great for both grown- ups and kids, tea parties or office parties.
- 1 package cream cheese
- 1 1/2 cups butter
- 3 cups white sugar
- 6 eggs
- a pinch of salt
- 3 cups all-purpose flour
- 1 teaspoon vanilla
- 1/2 cup skinned whole almonds
Preheat oven to 325 degrees F. Geneously butter and flour a large round pan. Put the almonds in a bowl and pour hot water over them. Rub them between fingers to get the skins off.
In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy. Add eggs two at a time, beating well with each addition. Sift and add the flour all at once and mix in. Add vanilla, salt and almonds.
Pour into the prepared round pan. Bake at 325 degrees F for 1 hour until set in the center. Test for doneness at the end of 1 hour. A toothpick inserted into center of cake will come out clean.
Run a knife around the edge of the pan and immediately invert the pan onto a serving platter. Let it sit with the pan still on top for 5 minutes before removing the pan. Let cool completely and sprinkle with powdered sugar.
