Meatloaf With Caramelized Onions

Not only delicious but also easy to make, this meatloaf with spices is a complete meal in itself. The ingredients can vary to taste. The ground beef can be mixed with vegetables, bread, bulghur, wheat, crumbled crackers and/or other spices to create different flavors. One or two tips and technique is enough to produce a great taste. I prefer the vegetable puree to any other combinations I've tried. The juiciness, moist structure is a result of this. In the upcoming winter nights, you can pair this meatloaf with mashed potatoes or oven baked potatoes to create a flavorful dinner for your guests.

Ingredients :

  • 3,5 lbs ground beef
  • 2 onions
  • 3-4 cloves of garlic
  • 1 big red bell pepper
  • 2 carrots
  • 3-4 mushrooms
  • 1 cup breadcrumbs
  • 1 egg
  • 2 teaspoons of salt
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon red chilli pepper
  • A handful of parsley

For the sauce:

  • 3 tablespoons ketchup
  • 3 tablespoons mustard
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

How to:

Chop the onions, garlic, bell pepper, parsley, carrot and mushrooms into small pieces and process in a blender until you get a smooth puree. Do not let it get too juicy, though.

Put the ground beef in a large bowl and add the mixture. Mix with a spoon. Add the egg, worcestershire sauce and spices. Knead, using only the tips of your fingers, add the breadcrumbs and knead with both hands. Do not knead too much otherwise the loaf will be tough. It should be moist and soft.

Wet your hands and shape the meat into a loaf. Place in a buttered oven-proof dish. Mix the sauce ingredients well in a cup and coat the loaf with it. Pre-heat the oven to 180°C, cook for 45-50 minutes.

Add the caramelized onion on top 20 minutes before it is done.

Caramelized Onions

Ingredients:

  • 2 onions (thinly sliced)
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of brown sugar
  • 2 tablespoons of soy sauce
  • 1 teaspoon of salt

How to:

Saute the onions and sugar in oil until transparent. When soft, add the soy sauce and salt, remove from heat.
