My research for the recipe I am sharing today started with my youngest daughter coming over to Bodrum, to our summer house for a visit for a couple of days. Before she came over, she shared a photo of a beautiful chocolate cake on Facebook and wrote a comment: ?Mommy I Want This?. It looked so delicious that I immediately headed into the kitchen and started working on it.
Even though I did not probably get the same taste, a very similar looking cake came out and was an instant favourite of everyone who had a taste. I decided to name the cake ?Mommy I Want This?. Hope you try it and like it as much as we did.
- 350 gr sugar
- 220 gr brown sugar
- 200 gr butter
- 3 eggs
- 2 tablespoons vanilla
- 450 gr flour
- 100 gr dark cacao
- 1 teaspoon bakingsoda
- 2 teaspoons bakingpowder
- 2 teaspoons instantcoffee + 1 glass of warmwater
Pre-heat the oven to 180°C. Evenly butter the cake mould. Combine the flour, cacao, baking soda, salt and baking powder in a bow and mixwell.
In a large bowl, mix the melted butter and sugar (all of it). Add the eggs and vanilla. Beatwell, until thoroughly combined.
Add the flourmixture and the coffeemixture and beat well.
Use the mixer nottobeat but rather to bring all ingredients to a thoroughblend.
Pour the batter into the butteredcakemould and bake for 30-35 minutes, until the top glistenes and looks shiny. After it cools down, sift powdered sugar over the top or cover with chocolate glaze.
