One of the most favorite summer desserts is, ice cream but have you ever tried making yogurt ice cream? It is easily made with simple ingredients and flavoured with fruit, nuts and sweet stuff like chocolate chips, cookies. I found out that you don't necessarily need an ice cream maker to make yogurt ice cream, just the freezer compartment in the refrigerator is enough. Why not try my tasty, smooth and healty recipe!
- 2 large peaches
- 2,5 cups natural yogurt (low fat if preferred)
- 6 tablespoons sugar
- 1 teaspoon vanilla
Wash, peel and grate the peaches. Add 2 tablespoons of sugar to the grated peaches, stir. Put yogurt, the rest of the sugar and vanilla in a big bowl and beat until smooth. Add the peaches to the yogurt mixture and beat again for 3 minutes.
Scrape the mixture into a loaf tin or a plastic container, wrap well in cling film and freeze overnight, until solid. Remove from the freezer about 5 mins before serving. Serve with fresh peach slices, garnish with nuts.
