- 3/4 cup seasoned bread crumbs
- 3/4 cup shredded Parmesan cheeese
- 2 teaspoons garlic powder
- ground black pepper to taste
- 3-4 zucchinis, sliced into sticks
- 2 eggs, beaten
- 1 cup olive oil for frying
- salt to taste
Mix bread crumbs, Parmesan cheese, garlic powder, and black pepper in a large bowl. Cut zucchinis into sticks . Dip zucchini sticks into beaten eggs, then press into bread crumb mixture, shake off the excess.
Place the breaded zucchini onto a plate while breading the rest, do not stack them.
Heat olive oil in a large skillet over medium heat. Fry breaded zucchinis a couple at a time in hot oil until golden brown, about 3-4 minutes.
Transfer the fried zucchinis to a paper towel-lined plate and sprinkle with some more Parmesan cheese. Serve hot.
