Potato Crescents
I made this easy recipe and to my surprise they were finished the same day. They were a big hit and they just melted in our mouth! I will definately make them again. They are a new favorite of the family. Try them, you'll also see that they will become a "must" bake in your menus.
Ingredients:
- 1 cup mashed potato (about 2 medium potatoes)
- 2 cups milk + 2 tablespoons of vinegar
- 1 whole egg
- 1/2 cup butter, melted and cooled
- 1/4 cup sugar
- 4 1/2 teaspoons active dry yeast
- 2 1/2 teaspoons salt
- 6?7 cups flour
- 1 cup crushed feta cheese
- 1 egg
- 1/2 cup finely shredded parsley
Combine cheese, egg and parsley and mix until homogenized.
How To:
Boil the potatoes in a sauce pan until tender and peel the skins off and mash. Combine mashed potato, milk + 2 tablespoons vinegar, egg, butter, sugar, yeast and salt in a large bowl. Using a hand mixer beat on low speed until combined. Let sit for a few minutes. Add in 1 cup of the flour and start kneading. Add in more flour, 1 cup at a time, until a soft dough begins to form. Add more flour until the dough pulls away from the sides of the bowl.
Place the dough on a floured surface and knead for 8-10 minutes, adding flour as needed, until the dough is soft but not sticky. Place the dough in a large bowl, greased with oil. Turn the dough to coat and then cover with plastic wrap or a towel and let it rise until doubled. When the dough has doubled, punch the dough down to deflate it.
Cut the dough in half and roll the dough into a circle, about 12-inches in diameter. Slice the dough into 10-12 wedges. Place one teaspoon of the cheese mixture on the wide end of the wedge and roll up into a crescent shape. Repeat the process with all the wedges.
Place the rolls on a greased baking sheet. Repeat with the second half of the dough. Cover loosely with a towel and let rise until doubled. While the rolls are rising, preheat the oven to 375F. Place the rolls in the oven and bake until browned and cooked about 15-20 minutes. Let the rolls cool before serving.
