Guacamole
Guacamole is an uncooked avocado-based dip that originated with the Aztecs in Mexico.The real trick to great guacamole is to use the freshest avocados. Also the avocados used must be ripe. Served as a dip with celery sticks, baby carrots, cucumber circles, red bell pepper and zucchini sticks or as a delicious sauce for sandwiches, it will satisfy everyone's taste buds. Adding cayenne will give this tasty guacamole recipe a big kick.
Ingredients:
- 2 avocados
- 1 lemon peel and juice
- 6 - 7 pearl onions / shallots
- 1/2 teaspoon salt
- 2-3 tablespoons olive oil
- 3 cloves garlic
- 2-3 chives
- 1 tsp ground cumin
- fresh mint leaves
How To:
Wash and cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado.
In a food processor combine the onions, garlic, salt, olive oil, and lemon juice, pulse to blend. Add the mashed avacado into this mixture and stir well.
Refrigerate for 1 hour. Before serving, add finely chopped chives, cumin, and lemon peel. Stir well again and place guacamole in a sauce dish, decorate with fresh mint and serve.
